1. These five-minute lunches have been saving me since the beginning of the school year. Especially in the first half of the week on my busiest days. This is what I’ve been rotating through:
Tuna + dill relish + a spoonful of mayo layered on thin stackers and topped with cucumber
Plain greek yogurt + raspberries + honey + grape nuts (yes, I’m elderly. The grape nuts! So good!)
Sourdough toast + whole milk cottage cheese + hot honey drizzle + sea salt
Smashed chickpea salad + lettuce wraps or endive cups
Homemade bistro box: apples + almonds + sharp cheddar + hard boiled eggs + mini sweet peppers + hummus
White pizza bagels: toasted bagel topped with shredded mozzarella, tomatoes, basil, garlic and a drizzle of olive oil. Broil for 1 to 2 minutes.
2. The fairlife chocolate protein shake + cold brew/coffee. I’ve been drinking this for well over a year now (maybe almost two?!) and I love it so much. Coffee on its own makes me so jittery. It’s like liquid stress. But mixing it with the fairlife makes it so much more balanced. Also, it tastes like a huge latte. Of course this would work with any protein shake but the fairlife tastes like straight chocolate milk. I can find it at costco too. And this works for me because I almost exclusively drink iced coffee. It doesn’t matter if it’s 7 degrees out. Iced all the way.
3. I am so tempted to get this fridge water dispenser that sits on its side so I can make spa water and easily grab it from the fridge. This is utterly ridiculous because when we built our house, we put a built-in filtered water bottle filler in our mudroom and it was the best choice ever. At first, I got a lot of pushback because our builder thought it would look tacky. I did not care - we drink so much water and my kids constantly fill up their water bottles. Plus, the fridges we bought do not have a filtered water dispenser. This is probably one of the most-asked about things in our house when people come over and everyone loves it. It is so incredibly useful and we use it a million times a day. Plus, it’s on the way out the door and very convenient. I think it’s the #1 thing I would do over again in the building process.
What is the dill relish?
Do you make it yourself or is it something one can purchase?
I LOVE dill!
I've been looking for easy ways to add more protein to my meals, and I'm really enjoying your morning coffee. I prefer the Fairlife chocolate shake, but the vanilla is also good. I just picked up a 10-pack of the chocolate at Costco. Thanks for the tasty tip!
